Making Uber Benne and "Open" Dosas
The Benne Dosa is arguably the most decadent avatar of the popular South Indian crepe - the Dosa. Benne means butter and this dosa is fried in a handful of it. It's not as easily available as the regular dosa, but it is quite popular. The "Open" dosa is for the adventurous types. It's a thick dosa with a (more than) generous sprinkling of chutney powder. It's probably called open dosa because it's not folded like the other dosas. This thing, when prepared well, is an indulgence!
Chandrika and I discovered this great benne dosa place (deceptively) named Srinivas Iyengar Bakery a few years ago. It is an Iyengar Bakery, but they also make the best benne dosas I've ever had. It's a fairly old establishment and is quite popular with folks in RT Nagar. It's in the crowded market area - so the best time to find parking is early morning. Luckily for us, they are very close to our place. Their open dosas are much better than those served at Konark on Residency road.
